Question: Is there a way to change the Customer details like Organization or Person post the Job is submitted ?
Answer: Unfortunately once a job is created there is no way to modify the Customer field(that includes Person & Organization Name) and fields get grayed out.
However you can copy this job to new order by going to Job Number > Click on Settings Gear Icon > Copy Job to New Order, this will allow you to copy this job details to new order with the exact same details and this also allows you to modify the organization name/person name.
Though this will be treated as New Job altogether but you do not have do redo things from scratch and you can mark the initial one as cancelled in order to avoid duplicate jobs issue.
Please Note: If an Order contains multiple items in it and if you attempts to copy job to new order it will only copy the associated job not each line items.
